Cranberry Beans??

cranberry beansYou’re probably thinking, “What the heck are those?”   Well, let me tell you what they are not first.   They are  not related to cranberries in any way; nor do they taste like them.   They have a mild flavor that is somewhat comparable to nuts, particularly chestnuts. They get their name because of their appearance which is usually white or cream with deep red specks – quite striking when in their dried form but the specks usually disappear during the cooking.   Just t keep things interesting, cranberry beans are featured in one of the soups today:

Cranberry Bean, Brown Rice, Swiss Chard and Tomato
